I love a good salad – it is my Lunch staple.

Easy and quick to make with so much potential variation. This Autumn dish also has the Probiotic and Gut Healing benefits of Red Cabbage Sauerkraut to perk up your Immune System.

My Autumn Probiotic Pork & Rainbow Chard Salad is colourful, tempting and delicious.

I try to incorporate some ‘Greens’ into each meal and balance a small amount of Raw food with cooked. My body needs extra nourishment and warmth so too much cold and raw food is not beneficial for me, but I do have a salad most days and a Green Smoothie with my breakfast. A tip I have found useful is to sip a little warm liquid with my Smoothie to help my depleted system cope.

Like anything, something is only Good or Healthy if it works for you. Taking the time to get to know and understand your own system is not easy but once you have that intuition choices get much easier. Often you may need a little guidance though as the process can often feel overwhelming to begin with.

My Acupuncturist confirmed things further for me. My tongue is very pale apparently and this tells her (and me) that my body is very depleted and that I need nourishment of all kinds.

Chicken broth, soup and steamed vegetables.

I need to go easy on the spices and Detox food. Go easy on the cold and Raw stuff. These are nutritious and healthy but it is about finding what suits your particular body. In order to heal I do need to do detox work for sure, but I need to be careful as I am too weak to handle too much. So the rule for now is 80% nourishment and 20% Detox and that includes Food too.


The Salad:

Autumn Probiotic Pork & Rainbow Chard Salad

Method:

Layer a handful of Rainbow Chard.

Add a few shredded leaves of Lettuce or other Greens.

Layer some Cooked Pork.

Add a spoonful of Homemade Raw Sauerkraut.

Dice up a dozen Olives and sprinkle on top.

Sprinkle some Sea-salt.

Drizzle a small amount of Olive Oil and Raw Apple Cider to taste.

Just enjoy. xx
