Could there really be such a thing as a completely healthy cake which tastes sweet like chocolate, and is actually classed as nutrition for Adrenal Fatigue?

 

The amazing news is that there is, and I have found the recipe.

It goes without saying that everything I make is gluten and dairy free. Standard. And sugar free as much as possible too. However, although I don’t touch refined sugar I usually need some kind of sweetness in my desserts and mostly opt to using a small amount of raw honey or xylitol here and there. Which isn’t so bad. But I wondered if I could ever make something which didn’t even need these substitutes as I look to support my adrenals even more and avoid any form of sugar taxes them.

The answer (and completely surprising) sweetener alternative came in the form of….. A SWEET POTATO!

Honestly, it may not sound too appealing but its really good and really sweet. This is turning into the type of cake you could happily eat for lunch with no guilt.

Infact, this cake is not only good nutrition for Adrenal Fatigue, but also for the Gut. You see, when you cook a potato and leave it to go cold, it becomes a form of resistant starch which is super beneficial to aid healing leaky gut and improving microflora. Bonus.

Loaded with nutrient dense foods like coconut) this cake is power packed to also actually support your Thyroid and Adrenals. In the past I’ve been cautious about using carob over raw cacao but I have to say that in this instance the carob actually tastes better. The reason for swapping is that although raw cacao is full of antioxidants (and I have a FREE recipe book for you full of Cacao treats here) it unfortunately does contain caffeine which stresses the adrenals and worsens adrenal fatigue*.

*I eat a really good diet but I am weaning off prescription adrenal support and I was conscious of how heavily cacao featured in my diet. Once I stopped I now notice a jitteriness (weak adrenals) if I have any. So, for me switching to carob is a fantastic alternative.

This cake truly is the real deal when it comes to supporting health, proving nutrition for Adrenal Fatigue, the Endocrine System and the Gut. Its also super quick and easy to make and takes less than 5/10 mins to prepare if you are feeling tired. 


Ingredients:

// 1 small Sweet Potato

// 1/2 Cup Carob Powder

// 1/2 Cup Coconut Flour

// 1/2 Cup Coconut Milk

// 1/2 Cup Coconut Oil

// 1 Teaspoon Vanilla Essence

// Pinch Sea-salt

// 4 Large Eggs

// 1 Teaspoon Baking Powder

Method:

// Pre-heat over to 180 degrees

// Pre bake the Sweet Potato until soft – about 40 Mins.

// Add all the remaining ingredients to a mixer with the Sweet Potatoe and blend well.

// Line a cake dish with baking paper and pour in. The batter should be thick but easy to pour.

// Bake at 180 for approx 30 minutes or until firm but moist.

Enjoy by itself, or with a dollop of coconut yogurt and some blueberries.
