I love it when I blindly create something really good. It is usually born out of a sweet treat craving and a lack of ingredients in my cupboard…. meaning I have to get really inventive and creative.

Sugar free coconut & Carob pudding

Sometimes it really really works in my favour….

Coconut & Carob Paleo Pudding is delicious and healthy. My perfect winning combo. It is full of good fat from organic coconut milk (and other nourishing ingredients like an organic egg yolk) to satiate and support hormones and thyroid health. Additionally, switching conventional cacao or chocolate for carob is a really good way to get a very similar taste without stressing the adrenals. There can be a misconception that detox and raw foods are always healthy and right for us. They certainly can be, but if your body is in depletion mode – from adrenal fatigue, thyroid and/or hormone issues you really need to nourish nourish nourish. No detoxing, just easily digestible nutrient dense real food to give the body what it needs.

Fats often have a bad rap but again our hormones can only be produced and function well if we have enough fats. The good stuff is good. You know your own body and intuition will provide the ultimate perfect guidance if you listen to what feels healing for you.

This tasty dessert is time friendly (as always) for those with CFS and Lyme. It is gluten, dairy and sugar free of course. Yet it tastes so yummy I cannot stop eating it….. To be honest when treats are this healthy I don’t even limit them.


 

Ingredients:

1 organic Egg Yolk

2 heaped tablespoons Carob Powder

3/4 can Organic Coconut Milk

1 tablespoon Coconut Butter

1 tablespoon raw Coconut Oil (if you use slightly more the pudding sets a little harder which I sometimes prefer)

1 teaspoon organic Vanilla Essence

Pinch Seasalt

2 squares dark Chocolate (optional but does improve taste considerably)

1 teaspoon Xylitol

Method:

Melt everything except the vanilla and egg yolk on a low heat.

Add the egg yolk and stir continuously over the heat for 4-5 minutes.

Remove from heat and add Vanilla once slightly cooler.

Taste test….. If its too bitter for you add a little more xylitol (or honey if you prefer.)

Pour into ramekins/pretty teacups and set in fridge for at least an hour.

Serve with some strawberries/raspberries and enjoy.

Time Taken: 6 Minutes to create.
